Adventures in vegetarianism continued…Avocado and capers come together with Dijon mustard in this play on the classic steak tartare.

Ingredients
  • 2 tablespoons olive oil (extra virgin)
  • 2 tablespoons red onion. minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon capers
  • 1 tablespoon chopped parsley
  • 1/2 small jalapeño, finely diced
  • 3 dashes Worcestershire sauce
  • Kosher salt
  • Freshly ground pepper
  • 2 medium avocados, peeled and diced
  • Toasted baguette slices
Directions
  • Step 1 In a bowl, combine olive oil with onion, mustard, lemon juice, capers, parsley.
  • Step 2 Add jalapeños and Worcestershire
  • Step 3 Season with salt and pepper
  • Step 4 Gently fold in avocados.
  • Step 5 Mound the tartare plates and place a bit of mustard in the center.
  • Step 6 Serve with toasted baguette slices.
