Adventures in vegetarianism continued…Avocado and capers come together with Dijon mustard in this play on the classic steak tartare.
Avocado Tartare

Ingredients
- 2 tablespoons olive oil (extra virgin)
- 2 tablespoons red onion. minced
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon capers
- 1 tablespoon chopped parsley
- 1/2 small jalapeño, finely diced
- 3 dashes Worcestershire sauce
- Kosher salt
- Freshly ground pepper
- 2 medium avocados, peeled and diced
- Toasted baguette slices
Directions
- Step 1 In a bowl, combine olive oil with onion, mustard, lemon juice, capers, parsley.
- Step 2 Add jalapeños and Worcestershire
- Step 3 Season with salt and pepper
- Step 4 Gently fold in avocados.
- Step 5 Mound the tartare plates and place a bit of mustard in the center.
- Step 6 Serve with toasted baguette slices.
